The Basic Toast
1 loaf (1 1/2 lbs.) italian bread
EVOO, for brushing
1 large clove garlic, peeled
Preheat grill pan over medium heat. Cut bread into 3/4 inch thick. Crush garlic in EVOO. Brush pan and bread with EVOO. Grill, about 2 minutes per side. Cover with topping.
Toppings
1. Tomato, EVOO, Balsamic Vinegar, Basil, Salt, Pepper
2. Sun-dried tomato, fresh mozzarella, salt, pepper
3. Ricota, caramelized onion, salt, pepper
