Chilli Chicken - I

This is possibly the simplest chilli chicken recipe. Take about 4 onions. Cut 3 of them into large pieces. Heat some oil and fry the onions till they are golden yellow. Then keep them aside. Make a paste with 1 onion, ginger (1 inch), 2-3 garlic. Heat oil and fry this paste for about 2 minutes. Add the chicken pieces and cook for about 5 minutes. Add 2-tablespoon of soya sauce, tomato sauce, chilli sauce and the onions and cook till the chicken pieces are soft. Serve hot.

  1. One modification could be to marinate the chicken pieces in vinegar for about 30mins/1 hr before cooking. This makes it taste better. Also, one could add vegetables like green beans, broccoli, mushrooms, green pepper, sliced carrots, baby corn etc. to the gravy. This increases the volume and hence it lasts longer :)
